Easy Eggs

An often overlooked healthy breakfast, which is why I have included it on my website - as sometimes we are just looking for ideas! You can cook the eggs however you wish, obviously frying is one of the quickest ways.

What I like about this breakfast option, is that it has a good amount of fat and protein to help keep you satiated (full and content) for longer. Unlike sugary breakfast cereals, you will not get a blood sugar slump shortly after eating this for breakfast.

The twist of lemon, salt and pepper compliment the eggs and leafy greens making it just a bit special.

Course Breakfast
Prep Time 1 minute
Cook Time 5 minutes

Ingredients

  • 2 Eggs
  • 1/2 tsp Butter
  • 1 handful Leafy Greens (mesclun, rocket, baby leaves)
  • 1 slice Lemon
  • Salt & Pepper to taste

Instructions

  1. Heat your frypan (I love to use a small well seasoned cast iron one)

  2. Add butter, spread around base of frypan

  3. Crack 2 eggs into frypan, and cook until they are how you like them

  4. Place a handful on leafy greens on your plate, salt and squeeze lemon juice over them

  5. Place the eggs on the leafy greens (instead of toast), salt and pepper to taste
